BC Albacore Tuna Poke [pronounced Po-keh]

Ingredients:


1 lb. BC Albacore tuna cut into 1/4 inch cubes
1 Tbsp. sea salt
1 Tbsp. mirin
1 Tbsp. sesame oil
1 Tsp. soy sauce- just enough to add color
2 Tbsp. finely sliced green onions
1 Tsp. ginger - minced
1 Tsp. Thai chili -diced
1 Tsp. sesame seeds
 White pepper to taste

Garnished with fresh cucumber, fresh cilantro and rice wine vinegar
Served in a martini glass

Method:
Mix the sea salt into the tuna cubes and refrigerate for 30 minutes.Add the remaining ingredients and mix well. Peel half of a cucumber and slice finely. Season the cucumber slices with a sprinkle of rice wine vinegar. Line the slices around the inside of the martini glass. Add a scoop of the tuna poke and garnish with fresh cilantro.

This is a great Hawaiian recipe that has become a West Coast favourite.
