Almond Crusted Halibut with Savoury Kiwifruit


Serves Two - Prep time under 20 min.

Ingredients:
1 lb. fresh halibut fillet - cut in two
Flour- to coat the halibut
1 egg - beaten
3/4 cups shaved almonds - toasted
2-3 tbsp. olive oil
Salt & pepper to taste

Method:
Preheat the oven to 425 F degrees. Place a parchment paper on a baking tray and drizzle half of the olive oil where the halibut will be placed. Season the halibut with salt and pepper . You may also season the flour with salt and pepper. Coat the halibut with flour thorougly and dredge into the beaten egg. Then coat it with the toasted almonds and place on the baking tray. Drizzle the remaining olive oil over top. Bake at 425 F for 12-16 minutes. May be served with steamed rice.

Savoury Kiwifruit

Ingredients:
2 fresh kiwis- peeled and sliced 1/4 inch thick
2 tbsp. butter
2 tbsp. finely diced onions
juice of one key lime or 1 tsp. of lemon juice
1 tsp. of mandarin orange zest
1 tsp. of honey
pinch of cayenne and sea salt to taste
1 ounce of Gran Marnier or Triple Sec or brandy

Method:
In a saucepan on medium heat add 1 tbsp. of butter along with the onions. Saute until tender. Add the kiwi, lime juice, the orange zest, honey and seasonings. Saute for 2-3 mins. or until the kiwis soften then add your choice of the above liquers. Reduce the liquer by half then add the remaining butter and turn off the heat. Stir in the butter until melted and then serve as a topping for the halibut.
