Goji Berry Cous Cous
Ingredients:
1 tbsp. olive oil
1/3 cup diced onion
3 tbsp. pine nuts
1 1/2 cups water
3 tbsp. Goji berries
1 cup cous cous
3 tbsp. freshly chopped parsley
1/2 tsp. salt
1 tbsp. butter
Method:
Place a medium sized covered pot on medium/high heat. Add the oil and saute the onions until cooked and tender. Add the pine nuts and continue to cook for 1-2 mins. until the nuts are toasted. Remove the onions and pine nuts and set aside. Add the water to the pot along with the Goji berries and salt and bring to a boil. Turn off the heat then stir in the cous cous, onions, pine nuts and parsley.Cover and let stand covered for 6-8 mins. Add the butter then fluff with a fork before serving.
