Chocolate Candied Orange Peel
Ingredients:
Orange peel of 4 large oranges
1 ½ cups Water
1 ½ cups Sugar
For: Sugar Coated Candied Orange Peel
1 ½ Cups Water
3 Cups Sugar
And enough sugar for coating
Method:
The method in preparing both, the chocolate or sugar coated orange peel is similar. Cut the top and the bottom rind off of the orange. Then quarter your orange by cutting into it the depth of the rind from the top to the bottom. Remove the rind in 4 pieces and cut them in strips ¼ inch thick (julienned). Place all the orange slices in a pot with lots of water. Bring the water and rind to a boil then drain water and repeat this process 3 times. On the last time of draining the water add more fresh water and place them in the fridge over night. This process will remove the bitterness from the rind. In a pot, add the water and appropriate amount of sugar and bring to a simmer. Then add the orange peels and simmer for 45 -55 minutes till the orange peel is nice and tender. Drain the syrup from the peels and retain the syrup. To make chocolate candied orange peel place the orange rinds on a wire rack to dry for 2 days. Then coat them in melted chocolate. To make sugar coated orange peels coat them with sugar as soon as you remove from the syrup. Then place them on a wire rack to dry for 2 days.
