Cauliflower Polonaise

Serves Two

Ingredients:
1/2 large cauliflower or 1 small cauliflower
1/3 cup of butter
1/3 cup of bread crumbs
1 egg - hard boiled and chopped
fresh parsley for garnish- finely chopped
salt and pepper to taste

Method:
Cut the cauliflower florets away from the stem. Steam them until they remain slightly firm or for approximately 12-15 minutes. While they are steaming, place a small pot of water to boil and add the egg to hard boil. Cool the egg down in cold water before chopping. Season with salt and pepper to taste when chopped. Remove the cauliflower from the steamer, season with salt and pepper and set aside. In a small saute pan on medium heat, melt the butter then add the bread crumbs. Saute and stir for 2-3 minutes until the bread crumbs have browned. When done, stir into the cauliflower along with the boiled egg. Garnish with the fresh parsley overtop and serve.
