Cherry Tomatoes
With Chevre Frais
Serves: 2
Ingredients:
3/4 lbs. Cherry tomatoes sliced in half
1/8
lb. Chevre frais (fresh goat cheese) sliced (60 grams)
Fresh basil
3
large leaves sliced
2-3 slices of fresh onion thinly sliced (may add
more to taste)
2 Tbsp. pine nuts toasted in microwave
Sea salt to taste
Coarse black pepper to taste
3 Tbsp. fresh extra virgin olive oil
Method:
Slice the tomatoes in half from the stem down and season with
sea salt to taste in a salad bowl.
Place the pine nuts in a paper towel
then fold like an envelope. Microwave them for a minute and a half to
toast them.
Roll the basil leaves into a cigar shape and slice them finely.
Slice the onion and chevre cheese. Add the cheese, onions and basil
to the tomatoes.
Top with the toasted pine nuts and season with the black
pepper to taste.
Drizzle the olive oil over top. Feel free to sponge
up any of the olive oil with your favourite bread!
