Mother Hen's Chicken Noodle Soup

Ingredients:
2 tbsp. butter
1/3 cup  diced onion
1/3 cup  diced carrots
1/3 cup  diced celery
2 1/2-3 quarts  homemade chicken stock
1-1 1/2 cooked chicken breasts -cubed
1-2 bay leaves
125 grams egg noodles- broken up 
1/2 tsp. thyme
1/2 tsp. marjoram
pinch of dried parsley
salt and white pepper to taste

Method:
In a large pot over medium heat, add the butter to melt. When melted, add the onions, carrots, celery and herbs along with a pinch of salt. Saute until tender. Pour in the chicken stock and bring to a boil. Add the noodles and continue to boil for 5-6 minutes stirring well. Then add the chicken and reduce the heat to a simmer.Season with salt and pepper to taste and cover. Let simmer for 10 minutes. Remove from heat and serve.
