Kosta's Cranberry Sauce 2008
Edition -
Serves: 2 cups
Ingredients:
3 Cups of fresh
cranberries [12 oz. package]
3/4 Cups white sugar
3/4 Cups white wine
Riesling or Viognier preferably
3 Large mandarin oranges (juice only)
A few pinches of salt
Method:
Place all of the
combined ingredients in a saucepan on med/high heat and bring to a
simmer.
Reduce heat to medium and
let simmer until the berries pop open and soften.
Stir occasionally.
As sauce reduces, lower heat to medium/low. Cook approximately 20-25
minutes in total until sauce is at a good, thick consistency. Makes
2 cups.
Recipe may be doubled to
serve more. This recipe may also be used to make a compote for serving
warm over ice cream.
Cranberry Compote: 1 Cup
of the cranberry sauce 1/4 Cup maple syrup 1/8 Cup of brandy Pinch
of cinnamon Combine all of the above ingredients and bring to a simmer
on medium heat. Turn off the heat and let stand for a few minutes.
Serve while still warm over vanilla ice cream. .
