Eggs Over-Easy With
Roquefort
Serves: 2
Ingredients:
4 free-range eggs
1 tbsp. butter
2 tbsp. Roquefort cheese, crumbled
2 tsp. extra virgin olive oil
1 fresh
BC hothouse tomato, sliced 1/4 inch thick
Sea salt and freshly cracked
black pepper to taste
Method:
Place the frying pan on medium heat. Melt
the butter and add the 4 cracked eggs.
Cook until the eggs are over easy
or as desired.
Place 2 eggs on each plate and add a tbsp. of Roquefort
over each dish of eggs, then sprinkle sea salt over the Roquefort.
Arrange some of the sliced tomatoes on the
side and season with freshly cracked black pepper.
Drizzle a tsp. of the olive oil over each dish.
Serve with a toasty, warm piece of baguette..
