Feta Spinach 

Serves Two

Ingredients:

8-9 oz. fresh spinach - prewashed & ready to use
1 tbsp. olive oil
1/2 small onion - thinly sliced into rings
1/4 tsp. dried dill
2 tbsp. feta cheese - crumbled
2 tbsp. extra virgin olive oil
Freshly cracked black pepper to taste

Method:

Place a saute pan on medium/high heat and add the tbsp. of olive oil. Toss in the onions and saute until the onions sweat and become tender. Season with the dill and mix well. Add the spinach and continue stirring until the spinach turns brilliant green. Mix in the feta cheese and stir until it begins to melt. Turn off the heat and drizzle in the extra virgin olive oil. Season with freshly cracked black pepper to taste.
