Fish Tacos
Ingredients:
1 lb. of fresh snapper or any firm white fish-cut into 1/4 inch thick by 2 inch long strips
Salt & White pepper to taste
1/3 Cup of flour
Grape seed oil- enough to cover 1/4 inch of fry pan
Small cabbage or lettuce (if prefered) finely sliced
1/2 onion thinly sliced
1/2 Cup of cilantro coarsely chopped
Juice of 1 fresh lemon
1 Cup of sour cream or Mexican crema
12 Corn or flour tortillas
Method:
Season the fish with salt and white pepper to taste. Coat in the flour. Place frying pan on medium heat and add the grape seed oil. When the oil is hot, fry the fish for 2-3 minutes on each side or until golden brown. While cooking the fish, mix the sliced cabbage or lettuce with the juice of the lemon. Season to taste with salt and pepper. Place the fish aside when done. Wrap the tortillas in paper towel and microwave them for 30 seconds. They may also be warmed in a frying pan on each side on low heat or steamed. When the tortillas are done, place them on a plate and top with the fish, sliced onions, cilantro, cabbage or lettuce and sour cream. Add a squeeze of fresh lemon over top. For those that like it hot, a few drops of tabasco will add some heat. Best accompanied with a cold Corona!
