Southern Style Fried Chicken
Ingredients:
1 Whole or 12 Pieces of bone-in, skin-on Chicken, consisting of,
Legs, thighs, wings & breasts (breasts cut into three pieces)
Or whatever pieces that you fancy.
2 Cups Flour
3 Eggs
2 Tbsp Milk
1 Tbsp Salt
1 Tsp Black pepper
1 Tbsp Paprika
2 Tsp Ground all spice
1 Tsp Garlic powder
Half & half Canola oil and Shortening -Enough combined to deep fry
Salt and pepper to taste
Method:
Season your chicken pieces with salt and pepper. In a bowl mix thoroughly the flour, 1 Tbsp salt, 1 Tsp black pepper, paprika, garlic powder and all spice.. In another bowl whisk the eggs and milk together. You can use an electric deep fryer or a cast iron pot with lid to fry the chicken.If neither are available then use the thickest pot in the house. Heat the oil to 375 C or medium high. Coat the chicken thoroughly one piece at a time into the flour mixture then into the egg wash and back into the flour. Place some of the pieces in the hot oil and cover. Do not pile up the chicken in the fryer, fry them in the amounts that fit in the pot freely. Cook for 10 to 12 minutes until lightly goldened or approximately 5-6 minutes per side. Wait for the oil temperature to come back to 375 C before cooking more pieces. Place the cooked chicken on a cookie rack and let it cool down. Then refry all of the chicken at the reduced heat of 350 C medium heat for 6 - 8 minutes. Turn mid way then place back on the cookie rack when done. Season with salt and let sit for 2 minutes before serving.
