Garlic Scapes Pesto

Ingredients:
6 or 7 fresh garlic scapes - cut into 2 inch segments
1 oz. (28 grams) fresh basil
1/3 cup grated parmesan cheese
3/4-1 cup extra virgin olive oil
2 tbsp. pine nuts - toasted (optional)

Method:
In a small food processor add the scapes and pulse the blender until pulverized. Add the basil leaves and repeat. Add the parmesan cheese and blend briefly. Drizzle in the olive oil and mix again for about 10 seconds. Add the toasted pine nuts and again mix briefly until the nuts remain coarsely chopped. This will keep for several days in the fridge.
