Kefalograveira Saganaki

Ingredients:
1 slice Kefalograviera or Kefalotiri cheese - cut 1/3 inch thick - approx. 4x4 pieces
1 lemon
Enough flour to coat cheese
1 Tbsp olive oil

Method:
To prep the cheese for frying cut the lemon in two. Use the one half lemon to smudge the cheese by squeezing the lemon at the same time to extract some juice. Then coat the cheese with flour. In a 6 inch pan on medium heat add olive oil. When oil is hot place the cheese in the pan and cook till golden brown then flip the cheese and repeat for the other side. . When the cheese is done on both sides squeeze the other half of the lemon over the cheese and remove from heat. This dish should be enjoyed immediately while it is warm with your favourite bread and wine.
