Kosta's Croquettes Croquettes are a great way to use up left-over mashed potatoes as well as any left-over meat or seafood. The meat or seafood can be chopped up and mixed with sour cream and cream cheese, diced onions and seasonings of your choice. The best way to start is to rub a little oil on your hands and spread out a ping pong ball sized amount of mashed potato in the palm of your hand. Use the first two fingers of the other hand to make an impression in the center which is where you will add your filling. After filled, close the palm of your hand to fold over the croquette and pinch the edges closed. Roll into a ball after sealing the edges. Coat in flour then dip in an egg wash followed by a coating in bread crumbs. Deep fry in the rice bran oil until they are golden brown. I like mine filled with canned BC sockeye salmon, sliced green onion, half sour cream and half cream cheese mixed together. The fun is in the fillings so get creative with whatever you have on hand.
