Mama's Mash - Quickie Version of Shepherd's Pie Serves Four Ingredients: 1/2 small onion - diced Method: Place a 12 inch covered saute pan (3 quart) on medium heat. Add the olive oil and onions and saute for a few minutes until the onions have browned. Increase the heat to med./ high then add the ground meat. Stir and break up the meat constantly until cooked through. Season with salt and pepper to taste. Remove from the pan and set aside. Add the boiled water to the pan and reduce to medium heat . Stir in the dried chicken stock and mix well.Add the potatoes and increase the heat to high to bring to the boil. Reduce the heat to medium and continue simmering, uncovered, until potatoes are fork tender (approx. 20 mins.) Reduce the heat again to low then coarsely mash the potatoes with a fork. Season with salt and pepper to taste. Stir in the can of corn followed by the cooked ground meat. Mix well. Top with the grated cheese and leave covered.
