Monkfish with Rind Butter

(Accompanied with Brussels Sprouts and Red Peppers)


Serves: 2


Ingredients:

1 to 1 1/4 lbs. fresh monkfish fillet
1 tbsp. olive oil
Salt and white pepper
1/4 cup butter
1 fresh lemon
1 clove garlic, minced
1 tsp. fresh or dried rosemary
Pinch of paprika


Method:

Season the monkfish with a tbsp. of olive oil , salt, and white pepper. For a whole fillet, BBQ for 20-25 minutes.

Cooking time varies according to the weight of the pieces. Smaller fillets require half the cooking time. While the fish is cooking, grate the rind off the lemon and cut the lemon in half.

Mince the clove of garlic. In a microwaveable bowl, combine the butter, garlic, lemon rind, the juice of half the lemon, and the rosemary.

When the dish is almost ready to serve, microwave the butter mixture for 2 minutes. Slice the monkfish into 1/2 inch slices and pour the butter over the slices. Sprinkle with paprika.

Brussels Sprouts and Red Peppers

Ingredients:

15 fresh brussels sprouts, cleaned and halved
1/2 fresh red pepper, thinly sliced
3 tbsp. olive oil
2 cloves fresh garlic, finely chopped
1/4 cup rose wine

Method:

In a covered sauté pan on medium heat, add 1 tbsp. of olive oil along with the 2 cloves of garlic. sauté the garlic until tender.

Add the brussels sprouts and red peppers and cook for 2 minutes, stirring regularly .

Add the wine, stir, cover, and reduce the heat to medium/low. Continue cooking for another 5 minutes.

Turn off the heat and stir in the remaining 2 tbsp. of olive oil. Season with salt and white pepper to taste. Garnish with 2 slices of lemon.

Special Remarks:

Monkfish used to be known as "poor man's lobster" due to its firm texture and modest price. It is now a mid-priced fish and is also sometimes called angler fish.

It is greatly favoured by the french for bouillabaise. In fact, they feel that bouillabaise should not be made without it. If you have ever seen a whole fresh monkfish, you will certainly never forget the face that only a mother could love!
