Oyster Frittata

Serves Two

Ingredients

8 oz. container of fresh oysters
3 Eggs
3 slices of thinly sliced lean bacon
1/2 small white onion finely diced
3 oz. of brandy
1/4 Tsp. chipotle powder
2 green onions sliced
5 Tsp. grated parmesan
2 Tsp. butter Salt and pepper to taste
Parsley for garnish

Method

In a small saute pan, add the butter, diced onions and bacon.

Saute the onion until caramelized then add the oysters with the liquid.

Fry oysters until firm to the touch then add the brandy.

Increase heat to high and saute until the alcohol evaporates approx. 1 minute.

Remove the oysters from the pan and reduce the heat to low.

In a bowl, beat the eggs, bacon, remaining liquid in the pan and salt and pepper to taste.

After beating the mixture, place it in the pan on the low heat.

To finish, place the oysters in the pan in a flower shape, add the chipotle, parmesan, sliced green onions and cover until the egg mixture cooks.

Garnish with parsley and serve.

Special Remarks:

When you are purchasing cod, be sure to ask for the fresh Alaskan cod and not the Alaskan black cod. Be prepared to pay approximately $1.00 per lb. more than you would for the regular Pacific cod because the Alaskan cod is flown in fresh. It is definitely money well spent for a great fish.

For those who are not comfortable with a few bones, ask your fishmonger to remove them.
