Quick
and Delicious Hamburgers
Makes: 4 Patties
Ingredients:
1 3/4 lbs. extra lean ground
beef
1/2 lb. ground pork or lamb
3 Tbsp. bread crumbs
2 Tbsp. dried parsley
1 Tbsp. Montreal steak spice
1 Egg
1 Tbsp. Dijon mustard
2 Tbsp. canola oil
Hamburger buns
Method:
Mix the seasonings into
the ground meat folding in gently. Do not knead the mixture.
Add the
egg and mustard and continue to mix lightly. Form into 1/2 inch thick
patties.
Heat the cast iron skillet
to med/high and add the oil.
Place the patties in the
skillet and cook thoroughly on each side until no longer rare in the
center. Ideal temperature in the center of the patty should be 160
F or 71 C.
Place a separate skillet
or saute pan on med/low heat.
Butter both sides of the
hamburger buns and place in the skillet to crisp for 2-3 minutes. Remove
from the pan and spread on a generous amount of mayonnaise.
Serve with
the recommended accompaniments listed below.
Mayonnaise Cheese- use
a mild cheddar if cheddar is preferable to processed cheese slices
Onions- very thinly sliced white or red Ripe hot house tomatoes sliced
1/4 inch thick Finely sliced lettuce Relish,mustard, pickles etc..
