Sockeye Salmon w/ Zesty Orange Sauce


Serves two - prep time 15 minutes

Ingredients: 
1 lb.    Sockeye salmon fillet - cut in two
Sea salt and white pepper to taste
1 Tbsp    Olive oil
1 Tsp    Orange zest
1 Tbsp    Mirin
Juice and pulp of 2 small navel oranges
1/4 cup    White wine or sparkling wine
Cayenne to taste
1 Tbsp    Butter

Method:
Season the salmon with salt and pepper and coat with the oil. In a frying pan on medium high heat, sear the salmon with the meat side down for 1 to 2 minutes on each side or till lightly brown. Sprinkle the salmon with the zest then add the mirin, orange juice, sparkling or white wine and a pinch or two of cayenne. Cover pan and poach the salmon on a medium heat for 8 to 10 minutes or till done. Remove salmon from the pan and place on a plate. Raise the heat to med/high and reduce the juice in the pan, stirring well, until there is approximately half a cup liquid remaining.. Add butter and turn off heat. Stir butter into the sauce till it melts. Then strain the sauce through a fine strainer onto the salmon fillet. Serve with steamed rice. The rice may be seasoned with some extra orange zest while cooking. Stir in a chunk of butter when done.
