Sea Bass n' Sweet Red Onion

Ingredients:


2 6-8 ounce pieces of sea bass- skin removed
1 med. sized red onion- cut in half lenthgwise then sliced very thinly
2 tbsp. extra virgin olive oil
1/2 cup of fresh parsley- chopped
sea salt & white pepper to taste
3 tbsp. white wine
2 lemon wedges
Optional- when sauteing the onions you may add a tsp. of cumin and a pinch of cayenne to give it an exotic ethnic flare.

Method:


Season the fish with your best sea salt and white pepper. Place 1/2 tbsp. of the olive oil in a fry pan on med/high heat. Add the onions and parsley. Season with sea salt and saute for 2 mins. Place the fish on top of the onions, sprinkle the white wine over top and cover. Reduce heat to medium. Shake the pan with the lid tight to prevent the onions from sticking every few minutes. Continue to cook for 8 minutes. Remove from the pan leaving the fish on top of the onions. Drizzle the remaining olive oil over top and garnish with the lemon wedges. This dish is great served with cous cous.
