Seared Ahi in Wine Marinade
Accompanied by Stewed Green Beans in Tomato Sauce

Stewed Green Beans

Ingredients:

2 tbsp. olive oil
1/3 cup diced onion
3 cloves of fresh garlic, sliced
4-5 new potatoes, peeled and halved
2 tbsp. tomato paste
2 large Roma tomatoes, peeled and quartered
1/2 to 3/4 lbs. fresh green beans, tips removed
1 cup water
Salt and pepper to taste

Method:

Since the beans take approx. 30 minutes to cook, they can be prepared first and allowed to simmer while preparing the tuna.

In a covered pot on medium heat, add the oil, onion, garlic, tomato paste, potatoes, and tomatoes. Cook for 5 minutes before adding the beans and water. Cover and reduce the heat slightly. Cook for another 25 minutes or until the potatoes are tender, stirring occasionally. Add salt and pepper to taste.


Marinated Ahi

Ingredients:

3/4 t o 1 lb. Ahi tuna steaks, 1-inch thick
1 large clove of fresh garlic, sliced
1 tbsp. rosemary
1/4 cup red wine
1 tbsp. grapeseed oil
Salt and pepper to taste

Method:

Season the Ahi with salt and pepper and place it in a medium-sized Ziploc bag. Add the garlic, rosemary, and red wine. Seal the bag with the air removed and refrigerate for 20 minutes.

Heat a frying pan to medium high and add the grapeseed oil. Sear the tuna on each side for 2 minutes and reduce the heat to medium. Continue cooking on medium for another 3-4 minutes until the tuna is slightly pink in the middle.

Slice the tuna and serve atop the stewed green beans.
