Seared BC Albacore Tuna with Peppercorn Sauce

*A Tuna Recipe Using Peppercorns*


Ingredients:

1 to 1 1/2 lb. Albacore tuna loin
Sea salt (your favourite)
1 tsp. canola oil
1 tbsp. butter
1 tbsp. pickled green peppercorns, crushed, lightly chopped
1/4 cup white wine
1/2 cup whipping cream


Method:

Heat the sauté pan to medium/high and add the canola oil.

Season the tuna with sea salt and sear it on each side for approx. 1 1/2 to 2 minutes leaving it rare in the center. Remove it from the pan.

Add the butter and peppercorns to the pan and cook for about 30 seconds. Add the white wine and continue cooking until reduced by half.

Reduce the heat to medium and add the whipping cream; cook until the sauce thickens (approx. 5 minutes) stirring frequently.

Remove from the heat and season with sea salt. Slice the tuna into 1/2 inch strips, place the strips on a plate and top with the peppercorn sauce .
