Smoked Salmon Roulades
Ingredients:
(amounts vary to portions required)
Sliced cold smoked salmon-
50 grams per tortilla
Flour tortillas 10 inch size
Cream cheese
Finely
chopped shallots
Spread a thin layer of the
cream cheese over the tortillas and sprinkle lightly with the chopped
shallots.
Place the salmon evenly
over the tortilla and roll tightly.
Slice into 1/4 inch slices
with a sharp serrated knife. Use the end pieces of the roulade to decorate
the center of the plate and place the remaining slices all around.
This dish may be prepared the day before needed.
Keep the tortillas
whole after rolling and wrap each of them tightly in plastic wrap.
Slice before serving.
Smoked Salmon Platter -
served with sliced flat pumpernickel bread
Ingredients:
250 grams of
sliced smoked salmon
A few thinly sliced rings of red onion cut from
the center
1 Tbsp. capers
Walnut oil or extra virgin olive oil
Spread
the salmon over the center of the serving plate.
Add the onion slices
and capers and drizzle lightly with the oil. Place the bread along
the outside edge of the plate and serve. .
