Kosta's Souvlaki Ingredients: 1 1/2 lbs of lamb or pork shoulder meat- cut into 1 inch cubes 2 large ripe tomatoes - halved then sliced 1/2 large onion sliced 1/4 cup of chopped parsley 6 pita breads olive oil- enough to coat the pita and meat salt and pepper to taste souvlaki seasoning mix- see below for recipe 6 skewers- 6 inches tzatziki -optional- 6 to 8 ounces Method: Soak the skewers in water for a half hour before use. Season the meat with salt and pepper and lightly coat with olive oil. Divide the meat onto the 6 skewers. Lightly coat the pita bread with olive oil and let sit for a half hour in a plastic bag. Cook the kebabs on the barbeque on med. heat until crisp on all sides. Warm the pitas on the barbeque a few minutes on each side until toasty. When the meat is done place the kebab in the pita and slide the skewer out. Add the tomatoes, onion, parsley and seasoning. Top with tzatziki if desired or may use mayo if preferred. To make souvlaki seasoning combine the following herbs and spices.
