Spot Prawn Boil

Serves 4

Ingredients:

1 1/2- 2 lbs. fresh whole B.C. spot prawns
4 quarts of water
1 - 1 1/2 lbs. Kolbassa sausage - cut into 3 inch chunks
2-3 potatoes -red or white- peeled and halved
2-3 cobs of corn- each cob cut into 3 pieces
1 onion - peeled and halved
Bouquet Garni - ( classic trio of parsley, thyme and bay leaves ) - tied together or placed in a cheesecloth bag
1 tsp. sugar
1 tbsp. sea salt
1 lemon- cut into wedges
Fresh parsley- chopped- for garnish 
Fresh cracked black pepper to taste - to season the cooked potatoes

Served with mayo, drawn butter and Colemans mustard (or mustard of your preference)

Method:

In a 6 quart stock pot ( preferrably with a strainer basket), bring the water to a boil and then reduce to a simmer. Add the sausage, potatoes, corn, onion, bouquet garni, sugar and sea salt. Cover and simmer for 25 -30 minutes or until potatoes are fork tender. Add the prawns and continue cooking for another 3 - 5 minutes or until the prawns are pinkish- red and the tails have curled. Strain well and serve on a bed of newspaper topped with a wax paper or butcher paper. Garnish with the fresh parsley and lemon wedges along with the above accompaniments on the side. Great paired with a glass of crisp white wine.
